One Minute Flaxseed Muffin Top

¼ c. Flaxseed, chia, hemp blend such as Omega Crunch Super Sprinkle® *see TIP
2 tsp. cinnamon
½ tsp. sugar (or 1 package of Stevia)
1 tsp. baking powder
1 egg, beaten
1 tsp. olive or avocado oil
Toppings: 1 tsp jam
1 T. Greek yogurt fresh fruit
Instructions:
Spray a small microwavable ramekin bowl with nonstick cooking spray. Sprinkle the bottom with dried blueberries, cranberries, or raisins (optional).
In a small bowl mix, all the other ingredients together and quickly pour into the prepared dish. Note: the mixture will start to rise right away. Microwave for 1 minute. Carefully remove the hot bowl from the microwave and invert onto a plate, top with Greek yogurt and jam, and decorate with fresh fruit. Try our Raspberry Chia Jam recipe on page 112.
